Dakos Salad

A refreshing summer salad utilizing fresh ripe tomatoes, feta cheese, olives, capers (and more). So very easy to make. Excellent alone or as a side dish to grilled meats.


INGREDIENTS:

  • 1 pkg ToManna Rusks

  • 4 oz Verginis feta cheese

  • 1/2 cup pitted Kalamata olives, halved

  • 1/2 red onion, peeled and sliced

  • 1 cucumber (optional) peeled, seeded and sliced

  • 2 cups cherry or grape tomatoes, halved

  • 2 campari tomatoes, quartered

  • 2 T capers

  • 5 T extra virgin olive oil

  • 2 T red wine vinegar (optional)

  • salt and pepper, to taste

  • 1 T dried oregano


HOW TO:

  1. Break the rusks into bite sized pieces and place on the bottom of a large bowl.

  2. Drizzle the extra virgin olive oil and red wine vinegar) over the rusk pieces; allow to soak in.

  3. Add the halved and quartered tomatoes, onion and cucumber, if desired, on top of the rusks.

  4. Add the the feta, olives and capers; sprinkle with oregano. Season with salt and pepper. Toss just before serving.
