Kataifi Portokalopita

Make this easy orange custard cake utilizing kataifi with shredded coconut. Think of this as a lighter bread pudding... perfect for those summer nights with a nice scoop of ice cream and caramel drizzle.

Ingredients


For the Kataifi 

• 1 package Zimi Kataifi Pastry, thawed fully

• 8 oz unsalted butter, melted

• 1 cup shredded coconut


For the syrup

Juice of one orange

• 1 and 1/2 cups sugar

• 2 cups water 

• pinch of cinnamon


For the custard

• 1 cup Greek yogurt

• 1/2 cup extra virgin olive oil

• 1/2 cup granulated sugar

• 4 large eggs

• 1 T baking powder

• zest of one orange

• pinch of salt


How To

  1. Preheat your oven to 350F degrees.

  2. Combine all the syrup ingredients in a small pot. Boil 10-15 minutes. Set aside to cool.

  3. Remove the kataifi and place in a 9" round baking tray. Add the shredded coconut; drizzle the melted butter and work into the kataifi and shredded coconut. Place in oven for approximately 30 minutes or until golden. Remove and allow to cool 10-15 minutes. With a fork, loosen the kataifi and coconut shreds a bit, creating space for the custard to penetrate.

  4. Meanwhile, combine all of the ingredients for the custard. Start with the greek yogurt in a mixing bowl. Add the extra virgin olive oil, sugar, eggs, baking powder and salt. Whisk until smooth. Pour the custard mixture evenly over the baked kataifi and return to the oven for 30-40 minutes until deep in golden color and cooked in the centre.

  5. Use a sharp knife or skewer to poke holes in the center while still hot and pour the cooled syrup over the top. Slice, serve and top with a scoop of ice cream and caramel drizzle, if desired.
