The Trendy Kabob That Will Heat Up Your Summer!

This kabob not only screams summer but also screams summer savings. Try out these gorgeous, delicious beefy kabobs at burrito prices! They may require a little effort but you'll quickly get the hang of it. These will become your summer go to!! Serve with tzatziki sauce and lemon evoo honey drizzle. Perfect for any occasion!

Ingredients
2 lbs ground beef or ground chicken or turkey*
6 flour tortillas (10") burrito size
1 bunch parsley, washed and dried
1 red onion, peeled and rough chopped
1 bell pepper, seeded; rough chopped
2 cloves garlic, peeled
1 T sea salt, or to taste
1 T garlic powder or to taste
1 T ground cumin or to taste
1 T dried oregano or to taste
1 t black pepper or to taste
5-6 wood skewers
Lemon EVOO Honey Drizzle
juice of 1 lemon
1/4 cup extra virgin olive oil
4 T honey
pinch of salt
For serving, if desired
8-16 oz North Shore Farms Tzatziki Sauce
*If using ground chicken or turkey, add one egg to the mixture to help bind it.
Directions
Place the ground beef in a large bowl. Meanwhile in a food processor, pulse the onion, garlic and bell pepper until finely diced; add to the ground beef in bowl. Place parsley in food processor and pulse until finely minced. Reserve 2-3 T of minced parsley for final garnish; place remainder in bowl with ground beef, onion, pepper and garlic. To the ground beef add the salt and spices. Blend by hand; mixing well until fully incorporated. If using ground chicken, add the one egg and blend in well.
Important taste test: Take about a golf ball size of ground beef mixture; flatten it out like a small patty and place in microwave in microwave proof dish and cook through for about 45 seconds. Allow to cool slightly and taste for flavor. Add more seasonings, if desired. Once you have confirmed the flavor is to your liking you can proceed to making the layers.
Take 6 flour tortillas and place on a cutting board. Stack them neatly and with a sharp knife, remove the rounded edges so you end up with squares. Move to the side.
Start with the first flour tortilla; place onto cutting board. Spread 1/6th of the seasoned beef onto the flour tortilla square. Repeat with the additional flour tortilla squares and ground beef. The top layer should be ground beef. Square up the edges and press down the stack of beef-tortilla layers.
Faintly score the top of the seasoned ground beef layer 4-5 times. This is to give you visuals of how wide your kabobs will come out. If you are content with the size, cut through the score lines and turn each "strip" on its side.
Arrange the "strip" layers onto work surface and tighten up making it compact. Place 5-6 wood skewers through with even spacing. Cut in between the wood skewers and prepare to grill, fry in pan or place in air fryer. If not cooking right away, place in refrigerator until ready.
Meanwhile prepare the lemon evoo honey drizzle; combine all ingrdients ina small bowl. Use it to baste the kabobs occassionally and to serve over kabobs once plated.
To serve: Remove the kabobs when golden, hot and cooked through. Place a few tablespoons of tzatziki sauce on plate, if desired. Drizzle with lemon evoo honey and finish with minced parsley.
Note: If desired, the kabobs can be smaller. Instead of stacking 3 "strips" together, only use one "strip" or stack 2 "strips" together.
